recipe: yellow curry.

Let’s face it: making Thai curry is difficult! It is rare that I can get the ratio of spices just right… Honestly, my Thai curries usually end up tasting like coconut water with some bland spices and whatever else I toss in. Up until recently, if I wanted a really good Thai curry, I had to order out; however, I think I’ve found my solution! At RH we love promoting products that are good for us, taste yummy, and are thoughtful about environmental issues… so we LOVE Curry Love.

Curry Love is an organic line of curry sauces (I buy mine at Whole Foods, but you can also buy online here!). They have yellow, red, and even banana giner flavors. The best part about this curry (other than the fact that you can easily create authentic Thai curry at home with little effort) is that it is made here in the US with certified organic, vegan ingredients. Also, the currys are jarred in glass or biodegradable packaging, and even the label are eco-friendly! What’s more, every time you make a purchase, part of the profits go to charity.

Here’s how I make my yellow curry:

Ingredients

1 jar yellow curry, 1 organic chicken breast, garlic, onion, coconut oil, turmeric, cayenne pepper (optional if you’d like some heat), sea salt, black pepper, cauliflower, potato, green pepper.

Putting it together

  • Slice up chicken breast into small chunks.
  • Combine chicken breast with coconut oil, chopped garlic, cayenne, turmeric (be generous! This spice is anti-carcinogenic),  sea salt, and black pepper in a large pot.
  • Cook until chicken is 95% done.
  • Add Curry Love yellow curry sauce.
  • Add potatoes, onions, green pepper, and any other ingredients you’d like to include!
  • Simmer on low until potatoes are soft.

    I may try that. I tend to dump in the Cumin, Turmeric, and black pepper with garlic, cayenne, ginger, and other things..and it’s hard to make that combo NOT taste good. But still, doing some legit curry could be fun too :)

      Legit curry is fun – I just find that it’s tough to consistently make a good one! The Curry Love has a bunch of spices in it already, I just like adding a little bit of extra turmeric for the health benefits, and some cayenne to give it a kick. :) Thanks for reading!         I will! once I get through the current batch of mystery spiced lentils and rice. (I found that by adding a little egg and flour, and perhaps flax, I can make a bean/rice curry mix into some pretty nice veggie patties almost like falafel..so that’s tonight’s plan)
