Pain. Fatigue. Digestive issues. Migraines. Irritability. Poor nutrient absorption (leading to malnutrition). Epigenetic effects (potentially putting your future offspring at risk for a plethora of issues). Nausea. Dizziness. Skin irritations (like eczema). Bloating. Flu-like symptoms… Some (crazy!) people would prefer to experience all of these and more rather than give up their favorite foods. I just don’t understand! Trust me – I love pasta, bread, cakes, and waffles as much as anyone else on this planet… BUT, I would NEVER resort to feeling the way I did prior to cutting out gluten ever, ever, ever again. That being said, I have experimented with most things gluten-free and have come up with a list of my favorites so that the newbie GF’er doesn’t have to do the dirty work (or should I say, cardboard-eating work). You’re welcome!
Bread: My favorite is Rudi’s. According to a representative from their company, they are actively committed to not using GMO ingredients in their products, and are currently working with the Non-GMO Project to become certified non-GMO. I keep the bread in the freezer or fridge, toast it, grill it, slather my favorites on it and eat it happily every time! I also have a bread-maker, and there is nothing like fresh, warm bread made with the ingredients you’re craving…
Pasta: I have two favorites… Truroots has really great pasta – the texture is most similar to that of it’s inflammatory counterpart; however, instead of wheat it is made with quinoa, amaranth, and brown rice – and it’s organic! Another favorite is Lundberg organic brown rice pasta. Don’t forget to eat pasta the healthiest way possible (click on the link for more info!).
Pancakes/Waffles: Healthy and delicious, Pure Elizabeth’s pancake mix includes a variety of non-GMO and organic grains and seeds to create the perfect pancake! There are also a bunch of amazing gluten-free “from scratch” recipes out there, like this one. Yum! I’m ready for breakfast again!
Pizza: My boyfriend recently bought some pizza crusts from Whole Foods (in their pre-made pizza section)… I normally wouldn’t have purchased these crusts (as I don’t know if the ingredients are non-GMO), but he did, it was what we had for dinner at my dad’s house, so I sucked it up and ate it. Later, I went on to do some research and found out that WF gets these crusts from the Venice Baking Company, who are committed to a GMO-free kitchen (according to a representative from their facility). They’re not organic, but they’re not GMO… Honestly, I will probably keep eating (on occasion) them because they were so good (and continue pestering them for an organic product!) – my dad didn’t even realize they were GF, and that’s saying something! If you are really concerned about the organic status of your food (like me!), you can always make your own crust as well. Lastly, there’s Amy’s frozen pizzas – right now they have several organic, gluten-free versions (although if there’s cheese on it, it’s from a cow). They do have a gluten-free pizza with only sauce and toppings (no cheese), and I usually just add my own goat/sheep/vegan cheese before tossing it in the oven. Keep an eye out for GF/DF pizzas – I have a feeling those will be on the market soon…
Mac & Cheese: Yes… this deserves it’s own category, thanks to Amy’s. They make a pretty yummy gluten/dairy/soy-free mac & cheese that is amazing. It’s also GMO-free (like all of Amy’s products). The only issue I have with it is the plastic wrap, but I just remove that before heating to avoid the toxic microwave plastic issue all together.
Cakes/Brownies: There are so many yummy products on the market… But Simply Organic are my favorites! Check out their products here. Again, you can always make your own if you’re feeling up for it!
This list is by no means comprehensive, but can hopefully lead you in the right direction.
